Ninno's Caesar Dressing
Seriously, who doesn't love a good salad dressing? Of course, who in this day and age makes
their own salad dressing? Anything more
than your basic oil and vinegar, and you’re headed to aisle 12, “CONDIMENTS -
CANNED VEGETABLES – SALAD DRESSINGS” at your local supermarket.
Here’s a salad dressing you make in your own kitchen, handed down over
3 generations, maybe more . . . first seen on these shores when my family was
released from Ellis Island in search of their American Dream.

Preparation:
Mix together the following and toss into a bowl of salad right before
serving:
1/3 cup extra virgin olive oil
1.5 teaspoons garlic, finely diced
1 raw egg
4 shakes Worchester sauce
1/4 teaspoon dry or ground mustard
1 lemon, freshly squeezed for juice
1/3 (or more) cup freshly ground parmesan
Sea salt and pepper to taste
Throwing thin shavings of parmesan on top of the salad after the
dressing is tossed is a nice touch.
